Avoiding Allergens: It’s the Right Thing to Do

While I was with PMMI — The Association for Packaging and Processing Technologies, I wrote this article on behalf of food scientist and food safety expert Jeffrey Barach, Ph.D. In it, he provides best practices for avoiding cross contamination by allergens such as dairy, soy, tree nuts and shellfish.
